Brooke’s Black Bean Nachos are a family favorite of ours and the perfect appetizer for any party!
1 10.5oz can Goya Black Beans – rinsed
1/2 cup chopped Scallions – green & white parts
1 2 cup package shredded Mexican cheese
1/3 cup Mayonnaise
1 generous teaspoon chili powder
1/8 teaspoon cayenne pepper
Multi Grain Tostitos Chips – I like these best for this dish.
1. Drain and rinse the beans and place in a large bowl.
2. Add your cheese, scallions, seasonings, and mix well. Gently mix in your mayonnaise and spread generously on tortilla chips.
3. Bake in 350 degree oven for 5-7 minutes until cheese is melted.
4. Makes approximately 24 individual nachos. Serve on platter. You can easily double this recipe.
Beans are optional, if you do not like them, you do not have to add them.
