1 10-ounce package pecan halves or a mixture of nuts

2 tablespoons (1/4 stick) butter
1 1/2 teaspoons ground cumin

1 1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
2 tablespoons sugar
scant 1 teaspoon salt

 

Preheat oven to 300°F. Place pecans in medium bowl. Melt butter in heavy small saucepan. Add sugar and salt, and continue to cook until sugar and salt are mostly dissolved 5-7 minutes. Measure out all other ingredients and combine well. Pour melted butter mixture over pecans and combine well. Sprinkle spice mixture over pecans and combine well. Transfer to cookie sheet. Bake until nuts are toasted, stirring occasionally, about 20 minutes. Serve warm or at room temperature. (Pecans can be prepared ahead. Store in airtight container.)
