A Favorite Recipe From Our Kitchen: Grilled NY Strip Steak with Classic Herb Aioli

Start With a Great Steak

The key to a delicious grilled NY strip steak is starting with a 1-inch-thick NY strip steak or rib eye. Before grilling, use paper towels to dry the steak thoroughly. You don’t want the surface to be wet. Generously season both sides with salt and fresh pepper.

Preheat the grill close to its highest flame. The recipe keeps the steak seasoning simple, allowing the beef and the hot grill to develop a flavorful exterior.

Grill It to Your Liking

Place the seasoned steak on the very hot grill and cook for about 4–5 minutes on the first side and 2–3 minutes on the second side for medium rare. Turn the steak only once and avoid moving it around on the grill as much as possible.

Once cooked, transfer the steak to a cutting board and let it rest uncovered for 10–15 minutes. You can place a pat of butter over the top of the steak as soon as it comes off the grill. After resting, slice the steak into strips for serving.

Add the Classic Herb Aioli

While the steak rests, prepare the Classic Herb Aioli. For the homemade version, whisk 2 large fresh egg yolks, 2 finely grated garlic cloves, 1 tablespoon Dijon mustard, and 1½ tablespoons fresh lemon juice together in a bowl until the mixture is thick and pale.

While whisking constantly, slowly drizzle in ¾ cup neutral oil, such as avocado oil, until the mixture becomes thick and emulsified. Whisk in ¼ cup extra-virgin olive oil for flavor, then fold in 2 tablespoons finely chopped fresh tarragon and 1 tablespoon finely chopped parsley. Season with salt and white or black pepper to taste.

Chill the aioli for at least 30 minutes before serving. If the aioli is too thick, whisk in 1 teaspoon of warm water. If it tastes too sharp, add a little more oil, or add more lemon juice when you want additional brightness.

For a quicker alternative, you can add the garlic, Dijon mustard, lemon juice, tarragon, and parsley to a generous cup of your favorite prepared mayonnaise.
