3/4 pound fresh tomatillos
3 California avocados
1 or 2 serrano or jalapeño peppers, minced
1 large garlic clove, minced
1/3 bunch chopped fresh cilantro sprigs
2 fresh limes -juiced, or to taste
1/2 a large onion finely chopped red or white
Salt – a generous amount to taste



Remove husks and rinse tomatillos under warm water to remove stickiness.  Chop your tomatillos small.  Halve and pit avocados and mash with fork until well crushed.  Add tomatillos, serrano, garlic, cilantro, lime juice, onion, and salt. Taste with a tortilla chip and adjust seasonings. Garnish dip with remaining tablespoon chopped onion and serve with tortilla chips.
