Goat Cheese Avocado DipIngredients:

1 large goat cheese log

2 large avocados – ripened

Store bought corn salsa (black bean & corn) (people like Trader Joes)

Salt

Fresh Lime

Fresh Cilantro – rough chopped

Fresh Scallions – rough chopped

Fresh Serrano or Jalapenos

 

Find a shallow serving dish, pie plate size or a bit larger. Spread the softened goat cheese on bottom. Spread the salsa on next layer, top with the cut up avocado. Top it all with the salt, lime, cilantro, scallions and Serranos. Serve and Enjoy. But make sure it is room temperature before serving, as it will be easier to scoop with chips. Also, use a hearty chip, thin chips will crack
