We all need to mix up our mid week repertoire. Give this on a try. Use whatever rice you have on hand, but be mindful basmati will cook faster, so decrease your time, by 4 or so minutes. Also be sure to let the rice rest before trying to stir it. Only stir briefly (with fork or chopsticks) to add the peas and scallions if using.
