You’ve rinsed your mussels thoroughly and now you’re ready to cook them. Here’s how you do it!

Start with a large vessel or casserole dish that comes with a lid. Add olive oil, butter, shallots, and garlic. Brown but do not burn. When you can smell the garlic cooking, add tomatoes and cook at a low temperature.

When the tomatoes are ready, I like to add saffron to the sauce. Saffron is an expensive spice but will add great flavor and color to your dish. Finish the sauce with salt, clam juice, white wine, and bring to a boil. Add a little cream and the mussels and cover for about five minutes.

When you remove the lid, the mussels should be open. Garnish with a healthy amount of fresh parsley and your creation is ready.
