This is for NY Strip steaks. Try it multiple times on your cooktop or grill, getting the timing down for your degree of doneness. An average size steak for medium rare on a hot pan is roughly 6 minutes first side and 4 minutes second side. Once you have gotten the hang for that cut of meat, choose another and perfect that.
